WHere is a home-style version of a cocktail found on the seasonal menu. Designed as a large-volume prepared mix that's bursting full of tastes of the festive period, which makes it perfect for your celebration. Any leftover cordial for morning drinks, desserts, or for additional servings of the drink.

Yields 10 people
For the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Cocktail (makes 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
To prepare the Syrup: Place every items in a pan, heat until it reaches a light boil, agitating so the sugar melts. After that, take off the burner allowing it to reach room temperature fully. Pour into a clean bottle, close it and refrigerate it in the fridge, it will last for up to one month.
To make Batch Mix: Combine the specified liquids into a sizeable container, allow it to infuse for an hour, then filter it , ideally through cheesecloth, making it completely strained.
To serve: Measure 85ml from the cocktail base into a mixing glass containing ice, and agitate carefully for one minute to cool it down. Filter into a frosted cocktail glass or similar, garnish with the cranberries adding the final touch with a brief mist of the essential oil over the top.
